Tsukemen is a popular Japanese noodle dish in which thick noodles are dipped into a bowl of hot broth before eating. At Kyu, the rich dipping broth is made with pork bone, several kinds of seafood stock, and soy sauce. The firm, extra-thick noodles pair perfectly with the flavorful broth.
Hiyashi Chuka is a classic Japanese cold noodle dish enjoyed during the summer. Chilled curly noodles are served with a lightly sweet and tangy soy sauce-based dressing, then topped with fresh tomatoes, cucumber, diced chashu pork, and a seasoned boiled egg. It is a refreshing dish that’s perfect for hot summer days.
